Thanks for making this change @jloleysens! LGTM. Tested locally with several of the processors as well as with a custom processor.
[nit] It might be worth reaching out to the docs team to see if the processor names should be title case or sentence case. I think in the mappings editor we use sentence case for the field types.

This contribution uses processor labels in both the processor editor and when editing a processor (in the processor drop-down).
How to test
Appendwith configuration{ "field": "test", "value": "What have you" }. The more processors added the more thorough the test! Creating the pipeline should work as expected.x-pack/plugins/ingest_pipelines/public/application/components/pipeline_processors_editor/context/processors_context.tsxon line 141 adding aconsole.log(processorTypeAndOptions). Enter the name of a non-existent processor in the create processor flyout and press enter. Click "Update" to add the processor to the pipeline. In the browser logs, the object should have an entry"type"corresponding to the exact name of the non-existent processor that was entered and have"options"correspond to the exact options provided.Screenshots
