Move packages as defined in https://github.com/containerd/containerd/blob/main/CONTRIBUTING.md#where-to-put-packages

Also adds a script to contrib which importers can run when upgrading to 2.0 to rewrite the imports based on these moves.

Sorry I didn't chime in while #9062 was open.

The pkg convention isn't in https://go.dev/doc/modules/layout. Russ Cox was against it in 2021. Neither https://github.com/grpc/grpc-go, https://github.com/dagger/dagger nor https://github.com/moby/buildkit have pkg.

Do we really want to introduce pkg?

To be fair, https://github.com/moby/moby and https://github.com/kubernetes/kubernetes are in the pkg camp though.

@kzys I wouldn't say using pkg is related to following some standard as much as about consistency. I agree pkg is not a great pattern, but having everything in the root makes the project much more difficult to navigate. The point of https://github.com/containerd/containerd/blob/main/CONTRIBUTING.md#where-to-put-packages is to make the project easier to navigate and add some consistency to where packages are put. We have top level non-pkg directories now and if you have ideas to better groups the packages then it is great time to consider. We will need to stick with a package layout during 2.x though.

I wonder if backend/ would be a better place for containerd packages, so we keep pkg/ for reusable tooling stuff.

Since there's a bit of 🚲🏠 going on: should anything that we currently have in pkg be internal (and thus non-importable outside the module)?

Updated along with changes from #9445. @kzys feel free to chime in over there, it is easy to make the changes here once we decide on the layout.

I suggest reviewing #9445 first then the move statements to see if there is agreement on how the packages are categorized. Only packages that have little to no external imports reported are put in 'internal'. Feel free to suggest more packages which may belong there.

contrib/v2-migrate.sh should be removed.

This script is for importers to run on their repo. I can keep it in a gist and link to it if that is better. My hope was to keep it in sync until at least the 2.0.0 release.

Welcome to the v2.0.0 release of containerd!

The first major release of containerd 2.x focuses on the continued stability of
containerd's core feature set with an easy upgrade from containerd 1.x. This

* `containerd-<VERSION>-<OS>-<ARCH>.tar.gz`:         ✅Recommended. Dynamically linked with glibc 2.31 (Ubuntu 20.04).
* `containerd-static-<VERSION>-<OS>-<ARCH>.tar.gz`:  Statically linked. Expected to be used on non-glibc Linux distributions. Not position-independent.

In addition to containerd, typically you will have to install [runc](https://github.com/opencontainers/runc/releases)
and [CNI plugins](https://github.com/containernetworking/plugins/releases) from their official sites too.
