    Ten years ago @sirkensingtons launched a better ketchup and we thought we’d stay focused on that product forever. This year, 2/3 of our business is mayonnaise. Push outside your comfort zone and let go of old narratives that restrict your identity. Experiment.

    As a sauce man, I can tell you there’s a simple reason why what you’re describing is harder than it sounds. Store bought sauces that aren’t refrigerated have to be: 1) Cooked at high temperature to kill any residual bacteria 2) High in acid to prevent developing pathogens
