Pea and Dill risotto is a great stand alone dish but it would also make a great accompaniment to a freshly grilled piece of salmon or chicken.
Dill can be a wonderful herb, but it must be fresh and used judiciously.
Risotto is moreish but I have made this recipe slightly smaller to give you three, tasty, medium-sized portions.

    I would like to introduce myself to everyone in this group.
    I've been a Vegetarian since 2009. I'm just now trying to drastically limit my intake of Dairy as well in order to minimize my Greenhouse Gas Footprint, but I love Cheese, so it's hard for me as you can imagine. I'm very passionate about the Environment, Gardening, Art, and Sustainability means a lot to me.
    My mom has a Spinal Fusion to fix her Herniated Disc arranged at the end of the month. So I might talk about my mom's bad neck a lot...

    This potato and savoy cabbage casserole is a great dish for the winter time - hearty, savoury and delicious! I have used mushrooms and bell pepper to enrich my casserole a bit, but you can use any vegetable you like. You can find the recipe and more photos here.

    Potato and savoy cabbage casserole gluten free

    Ingredients
    ~200 g potatoes
    pinch of salt
    100 g mushrooms
    1/4 of a savoy cabbage
    1 bell pepper (red or orange)
    oil of your choice for frying
    ~100 ml full-fat coconut milk
    1/2 teaspoon paprika spice
    1/2 teaspoon chili spice
    half a lemon

    Instructions
    1. Peel and cube the potatoes and cook in salted water until almost done.

    2. Meanwhile, heat up your preferred oil in a large pan. Chop mushrooms, savoy cabbage and bell pepper and add to the pan. Fry on medium heat until tender.

    3. Add ~100 ml of hot water to the pan and the spices. Add ~100 ml of full-fat coconut milk and stir until well-mixed. Now drain your potatoes and add to the pan, stirring again. Reduce to low heat and add the juice of half a lemon.

    4. Continue to simmer until everything is cooked. Serve warm and enjoy!

    Ingredients:

    • Chopped Cabbage : 2 Cups

    • Chana dal (split bengal gram) : 1 Cup

    • Chopped onion : 1 Cup

    • Green chilli (chopped) : 2

    • Oil : 2 tsp

    • Ginger garlic paste : 1 tsp

    • Tadka ingredients : Bengal gram,black gram,mustard and cumin seeds

    • Red chilli powder : 1 tsp

    • Coriander powder : 1tsp

    • Turmeric powder : ½ tsp

    • Salt to taste

    • 2 curry leaves

    • 1 red chilli

    • Coriander for garnishing

    Preparation:

    • Soak chana dal for 30 mins.

    • Heat the oil in a pan.Add red chilli by splitting it in to half. Add tadka ingredients, Next add chopped onions.Add 1-1/2 tsp salt.Add curry leaves.Add chopped green chilli and let all saute for 2 mins.

    • Add ginger garlic paste.Add soaked chana dal and mix well. Allow this to cook for 5 mins.

    • Add ½ turmeric powder and mix it well. Add chopped cabbage and mix it well. Close with lid and cook for 10 mins on medium heat.

    • Next, Add 1 tsp red chilli powder. Add 1 tsp coriander powder. Mix well and cook it for another 10 mins.

    • Add 2 tsp of grated coconut powder. This is optional. Cook it for another 5 mins

    • Next  Switch off the flame and add coriander leaves.

    • Now Cabbage and Bengal fry is ready to serve with rice or roti.

    Dr. Olivia Moses - Indian peanut chutney is a wonderful condiment if you would like to add a punch of spicy to your meal! It even works as a great spread for breads and sandwiches! My Mom and I had fun making this video for you! Enjoy!
