At Under-Study, our bakers rise early to coax complex flavors from ancient grains and freshly milled flour. Guided by instinct, temperature, and time, they transform organically grown, freshly milled flours into daily loaves that are anything but ordinary. Think crackling sourdoughs with a caramel-kissed crust, nutty spelt & sesame boules that whisper of toasted earth, and delicate baguettes that shatter just so.

We let the grain shine — using natural leavening, organic flours, and a trio of heritage grains in our signature country loaf — to create breads that are as thoughtful as they are delicious.
