Sign me up!!!

Somewhere on the web is an actual recipe from The Biggest Loser. But, I changed mine just a tad. (Biggest Loser Recipe–>>http://www.biggest-loser-recipes.com/chicken-cordon-bleu.html)

All you need is:

As many boneless skinless chicken breasts as you want πŸ™‚

Your favorite healthy seasonings (I love pepper and garlic with onion herbs)

Low-fat (or fresh) Mozzarella slices (or chunks) ,<–Swiss is actually the “correct” cheese…My family doesn’t care for it so I use mozzarella

Low sodium Canadian bacon

Directions:

Make sure all the fat is trimmed off the chicken and butterfly each breast (http://www.youtube.com/watch?v=yqjfQP3Mp2k)

Season to taste and grill (I left mine a little juicy so it didn’t dry out in the oven)

Put one slice of ham, and 1/2 slice of mozzarella on one side of each breast and fold

Once they’re all cooked and prepped with cheese and ham, coverΒ pan with tin foil and pop it in the oven at 350 deg for 10-15 minutes. (depending on your oven)

I think this would go really well with a baked sweet potato and steamed asparagus! They’re so tasty and even better the next day according to the wife. πŸ˜‰

Again, I don’t know calories….I really don’t count my own calories, I just make a conscious effort to eat healthy and listen to my body. πŸ™‚ If I count calories…I become the Hitler of calorie intake. (we know how that would end, EEK!)
