I plan to be more active in the future but this activity may just take the form of watching communities and enjoying the silliness. I have a proper blog where I rant about things, sorry LJ.

Coconut Chocolate Brownies

They're cooking in the other room and smell gorgeous.

125 g butter
1/4 cup coca
1 cup sugar
2 eggs
2 t vanilla essence
1/2 cup coconut
1/2 cup standard flour
1/2 t baking powder

Preheat oven to 180 degrees. Grease a 'shallow 20 cm square cake tin and line base with baking paper' (I use a biscuit tray with baking paper on the bottom. Works just the same).

Melt butter in a medium saucepan, add cocoa. Stir over a low heat for about a minute. Remove from heat.

Stir in sugar. Add eggs one at a time, beating after each one. Beat in essence and coconut. Stir in sifted flour and baking powder.

Pour into tin (use a spatula if you're finding you're not getting enough out). Bake for 30-35 minutes.

Et voila. Don't cut it up until cold. But it's fine to take little bits off while still piping hot. Enjoy!

One Egg Chocolate Cake

I made it because of my spectacular failure with a macaroon cake leading to me wasting two eggs. So this put me on the even, egg-wise.

50g butter

1 T golden syrup

1 egg

½ cup sugar

1 T cocoa

1 cup standard flour

1 t baking powder

1 t baking soda

¾ cup milk

Few drops vanilla essence

 
Preheat oven to 190, grease a 20 cm round cake tin (I used 23 cm, it just made a flatter cake) and line base with baking paper.

 Melt butter and syrup in a small saucepan, then pour into bowl with egg and sugar and beat well.

 Sift cocoa, flour, and baking powder together and fold with essence into egg mixture.

Dissolve baking soda in milk, and fold into egg mixture.

Pour mix into tin and bake for about 30 minutes (it took me 20).
You can leave it in the tin and then turn out but I just left it in the tin until serving time.

I also iced this with a chocolate-lemon icing (my own invention!) which I'll put up later.

1 egg white

4 tsp icing sugar

300 mL cream

½ tsp vanilla essence.


Anything else you want!

 

Beat egg white into soft peaks. Gradually beat in half the sugar. Seperately combine the cream, vanilla, the rest of the sugar and your other ingredients. Whip until thick. Fold both mixtures together and freeze until firm.

 

Place in the fridge 20 minutes before serving.
