Precision fermentation is a powerful biotechnology that allows us to program microorganisms, like yeast, to produce complex animal proteins without ever involving animals. It’s the same method used to make insulin and rennet, the enzyme used to curdle milk for ~80% all cheeses produced today. At Nutropy, we use precision fermentation to produce caseins, the key proteins found in milk, in a clean and efficient way. By feeding our microorganisms simple nutrients like sugars and minerals inside fermentation tanks, we create the very building blocks of real dairy, without the cow.

Caseins

Caseins are the core milk proteins responsible for the taste, texture, and meltability of cheese. They form curds, stabilize fats, and give dairy products their stretchy structure. Without caseins, plant-based cheese alternatives often fall short—lacking stretch, richness, and true dairy functionality. That’s why Nutropy focuses on producing bioidentical caseins through fermentation: this way, dairy producers can make animal-free products that don’t compromise on experience.
