In the past few days a fellow on Instagram has been posting about Easter Chocolate Eggs for people who have everything and need more. Louis Vuitton, Dior, Fortnum & Mason, The Bristol Hotel Paris, the Ritz, etc and famous Italian chocolatiers all produce incredible Eggs for price ranging from 350 British pounds to 1,300 pounds. They also put them in elegant boxes.

Here are 3 examples of what you can buy for Easter, the first egg by Marchesi in London is valued at 1,300 GBP, absolutely stunning and all eatable, the inside is also a work of art. High quality chocolate and artistic rendition. They are also a fairly large size.

On champagne today I discovered the difference between Millesime and non Millesime.

Millésimé (vintage) Champagne is a high-quality sparkling wine produced from the grapes of a single, exceptional harvest year, rather than a blend of multiple years. These champagnes are only declared in superior years, aged on lees for at least 3 years (often 5-10), and offer greater maturity, complexity, and distinct vintage character compared to non-vintage cuvées.

I was able to buy Champagne Jacquesson in Rome years ago. It is full of bubbles and very good quality. The year 2002 is valued at 800 GBP

We had the most lovely afternoon drinking champagne and chatting with just a few friends at home. We also had a very delicious Mascarpone cream cake, this rounded up a week of Birthday festivities. Despite the wind, brilliant sun was in attendance. It was all very comfy, the way life should be.

We reminisced on our 10 Anniversary living on Prince Edward Island and all the things we have done since. We certainly have a greater social circle here than we did in Ottawa.

On Wednesday I have been invited to talk on the current situation in Iran and give an historical perspective based on my own experience and observations during my time in the region. Due to bad weather it has been postponed to later.

The price of gas is now $2.00 per litre or $8.00 per gallon. Given we have lots of F150 trucks and SUV I can just imagine what people are paying and complaining. Other statistics about Canadian attitudes towards other countries. The USA is at the bottom now, where before Trump it was high. The number of Canadians willing to travel to the USA is down to 5% which is an all time low. It appears that many Canadians want to join the European Union to increase trade benefits beyond what we have now and divorce ourselves from the USA.

This is now Income tax season, renewal of car registration and car inspection which we do yearly on PEI, insurance renewal etc. It can be expensive.

We got our tickets to fly to Spain in September, there was a seat sale and got better prices. So we are pretty much set, we are arriving a few days before the cruise in order to see the Sagrada Família Church almost completed after 144 years of construction. In the meantime April is the start of the tourist season and I am ready to meet the challenge. However with the price of gas, hotels and restaurants, I wonder if we will get the same amount of people we did in 2025.

Here is a thought for the day: Eating Tiramisu will not make you happier but neither would Broccoli. So enjoy your dessert.

There is a British fellow I have been following on Instagram named Steve Moore, he spends a lot of time in Venice It. and the UK. He presents objects and ask of viewers what do you think this is, every object has a link to history and evolution of society. I made all kinds of discoveries through the stories told by this fellow. This being the Advent Season, Moore told a story of a salesman in Pennsylvania trying to sell to shop owners a box with 145 articles inside. This fellow had no luck and in the afternoon of December 1888 he walked into a store and asked the owner to buy his box, if he did not sell the objects in the box, he would take them back. The owner of the store only sold practical goods and the content of the box had no practical use but he took a chance. After two days the box was sold out, customers had bought every object. So what was it? By 1940 this shop owner had sold 500 million of those items, despite the fact they had no practical use, they were more about beauty. The objects were made in Germany and at first I thought of our wood nutcracker I bought in a shop some 45 years ago in Ottawa, this hand painted wood nutcracker was made in East Germany, at the time the GDR was known for its fine wood made toys and other objects. No that was not it at all. I am disappointed with Nutcrackers today made in China and look cheap.

The shop owner was W.F. Woolworth and this was his store, the objects in the box were glass Christmas balls for your tree imported from Germany. What Mr Woolworth understood was that his customers wanted practical but also beautiful things for their homes. Leads me to imagine what Xmas trees would look like if Mr. Woolworth had not introduced this item to shoppers.

To keep in the spirit of the Season here is an individual brand of Champagne matched to your Zodiac sign. Symbol of happiness, festivity, celebration, good health. Champagne is good for all occasions or moods.

Finally, Advent Season is Stollen Season. Stollen is a German pastry made at this time of the year.

Stollen, also known as 
Christstollen or Weihnachtsstollen, is traditional bread-fruitcake, popular during the Christmas season. It is characterized by its dense texture, rich ingredients, and thick dusting of powdered sugar. The ingredients; Dried fruits (raisins, currants, cherries), often macerated in rum or brandy, Candied citrus peels, Nuts (almonds are typical), Spices (cardamom, cinnamon, nutmeg), Marzipan rope, which is often included in the centre of the loaf. The most famous version is Dresden Stollen. So I bought a Stollen today at the store and will have it with coffee or tea.

In Rome we use to eat Pannetone or Pan D’Oro, it should always be eaten very fresh, unfortunately what is sold here is weeks old and imported. In Ottawa, on Preston street in Little Italy, there is a very good coffee shop with a great variety of Italian and Sicilian Pastries available fresh and prepared on the premises.

In the last few months some assumptions about how we drink and how we pair food with wine have met with a new perspective. Max Riedel of the Riedel luxury European glass factory has been promoting the idea that now the proper way to drink champagne is in a wine glass. He makes just such a glass at $95. per glass. Now many sommelier and wine connoisseurs are also saying this. Prior to the 1970’s la coupe de champagne was the way to go. Apparently Marie-Antoinette had created this fashion based on the shape of her boob. On the feast of a National Day, Ambassadors invite other dignitaries to come to the Residence at noon time to raise a coupe de Champagne, it is an old tradition in diplomatic circles.

Then in the 1970’s the flute replaced the coupe, why? It was fashionable and all manner of theories circulated, taste, flavour, more bubbles, etc. Some even suggested that if the flute was a little dusty from lack of use it was good and brought more taste or aromas out of the champagne. It was seen as very elegant to serve champagne in a flute.

Now we are going to the wine glass for champagne which holds more liquid and the shape allows the nose to have a greater appreciation for the various essences, floral, fruity, yeasty, etc.

Which is best, I really do not know. I was raised on the idea that the flute was best. The new fashion and the new shape of the glass has its advantages. If you drink a lot of champagne like Winston Churchill at one bottle per day, maybe the new wine glass style is for you.

With all this a new dispute on words, when you buy wine the label usually says “négotiant” a term in French that means  specifically, one who buys grapes, grape juice, or partially fermented or finished wine from others and sells the wine produced under his or her own name. I read that you should not buy champagne from a négotiant because this house has not grown its own grapes in their vineyard. It is seen has a fraud. Frankly I think that this is a case of knowing what you drink and informing yourself beforehand, not one of fraud. Many people will drink a wine or a champagne simply because they like it and not look any further.

One example is Krug Champagne, a company founded in 1843, it is also an expensive champagne brand. All three Champagne grape varieties are used in their blends – Chardonnay, Pinot Noir and Pinot Meunier – grown in vineyards around Ambonnay, Ay, Les Mesnil and Trépail. Krug owns around 30% of the vineyards used, while the rest of the grapes are provided by up to 100 growers. The important criteria is that all grapes used must come from the Champagne region of France and be bottled in that region.

The other factor is that if you taste a Moet et Chandon, a Veuve Clicquot, a Taittiger, etc, all have a different percentage of the 3 grape mix and it varies quite a lot which gives you different nose. Per example I find Veuve Clicquot too yeasty but that is its distinction, Moet et Chandon is more fruity, citrus and cream. So it all comes down to very personal taste. My mother truly liked Charles Heidsieck and it is one made from blends and it is amongst the prestige brands like Bollinger and Krug. So this distinction made by influencers is a little facile. It is much more preferable to inform yourself on what you like and why than going with fashionable ideas that may not last. One last thing, a champagne should be served at 10 C and not colder. On the other hand Russian made Champagne is usually served with ice icicles inside the bottle, Russian champagne has a very high content of sugar.

The other idea I encountered recently was that when you serve cheeses and offer a choice of 5 different cheeses, it is preferable to serve a white wine and not red. Many years ago there was a medical study showing that red wine was better for your health and many people started drinking only red wines and nothing else, some even wanted the heavy big red wines at 15-16% alcohol. Many such wines are found in Spain and Italy. I personally find them difficult to drink unless they are served slightly chilled at 17C or with an ice cube in the glass especially on a hot day.

The order of food in meals use to be that you would start with a white wine to accompany an appetizer, say seafood salad or fish, then you would switch to red for meat as a main course. Since cheeses followed people would stay with red wine, when they should have returned to a chilled white. So now we are told that a white wine is best with a fine selection of cheeses. Here are some suggestions;

  • Chardonnay with blue, Gruyere, or Gorgonzola.
  • Sauvignon Blanc with goat cheese, Asiago, Gouda, or Gruyere.
  • Pinot Grigio with Muenster, goat cheese, or Gouda.
  • Sparkling with Beaufort, Colby, Edam, or Brie.
  • Riesling with Colby, Gouda, brie, or blue cheese.

Yesterday we learned of the death of the USA 39th President, Jimmy Carter on his centennial year. A man who was honest, decent, had principles, had a difficult mandate but did his very best. He devoted his life to helping others. I remember his time in Office and wish we had now another Jimmy Carter in 2025 and how the USA and world would be a better place for it.

Every day I read Haaretz the Israeli left wing newspaper, it has a lot of good content, solid writing. Today there was a story about author Avi Steinberg, born in Jerusalem, raised in Cleveland and Boston. He has renounced his Israeli citizenship because of what he says is the horrible genocide being perpetrated in Gaza on Palestinians, quote “ethnically determined supremacist laws” His Op-Ed piece in TruthOut 26 December, he explains in full his reasons. He is not the only one to denounce what is going on after 450 days. To me the situation in the Middle-East is a Moral and Ethical matter. President Carter was asked why at the time of the Camp David accord, many decades ago, Why did Americans or people living in the West said so little about events involving Israel and Arabs, his answer quote They do not want to know unquote. So true, ignorance is bliss but it does not discharge us of our moral duty.

In Canada as of writing this post, our Prime Minister Justin T. has gone into hiding. He is somewhere out in Western Canada, maybe in British Columbia or Alberta, allegedly skying. No one knows. The media say that his resignation is imminent. Some 60% of the Liberal party want him out now. Popularity of the Liberal party in Canada is at 16%, 5 points lower than the NDP and 59 point lower than the Conservatives. Problem is according to all the calculations this would leave in a new Parliament after an election with the Bloc Quebecois, a anti-monarchy, Quebec only party, pro-separation from Canada as the new Loyal Opposition of His Majesty, this is unbelievable, cannot see that working out.

On so called tariffs by Trump.

During the recent election we asked a large sample of US residents about tariffs. Canada placed at the bottom of the list in terms of countries that should be subject to Trump tariffs.

Oil is 40% of Canada exports – I doubt there will be a tariff on that. The next biggest is auto parts – tariff unlikely given integration with US auto makers. Also Canada is the no.1 trade partner of 30 States and the no.1 trade partner of the USA overall.

The tariff threat is an issue for many other exporters. But also for US importers.

In retrospect the Trudeau visit to Trump in Florida was ill advised. Trump loves to smash down anyone who appears weak.

In other news

2025 is the 200 Birthday of Johann Strauss II, the waltz king, it is also the centennial of the death of French Composer Gabriel Fauré. On New Year’s day will also listen to the 1 January concert from the Musikverein, Golden Hall in Vienna, this year Riccardo Muti will be conducting the Vienna Philharmonic Orchestra at the Musikverein for the seventh time.

Vladimir Putin has been in Office 25 years, longer than Josef Stalin, though there are some similarities between the two.

Here in Charlottetown, it feels like Spring, warm weather, snow almost gone, sunshine and blue sky. The champagne is in the fridge, Josef Perrier Cuvée Royale, Will is making a shrimp chowder and a syllabub for dessert, which was a popular dessert in 16th England.

Also on January 1, we will celebrate Shogatsu which is a Japanese festival with our Asian friends in St-Peter’s Harbour, North-East, PEI.

So as we approach my Birthday, I still look 25 with the lights behind me, I have bought some things for the house. I got a new queen mattress Stearns & Foster which is the top of the line, my philosophy being that if I am going to sleep on it for the next 15 years, I will need the best beauty rest experience. I am very happy with the new mattress and pillows and other accessoires. Then I got a new Berger Lamp from France, with various scents like orange flower, Cedar wood, Eucalyptus, etc. These lamps are wonderful and very popular in Europe.

Did you know that the Berger Lamp was invented by a man who worked in a Morgue in Paris. It is also used in autopsy rooms, the odour of cadavers can be unpleasant. Unlike money, death has an odour. So he came up with this lamp to deodorize the air and the lamp being burning scented oil is very pleasant, nothing metallic or artificial about the odour.

Will is busy preparing a small birthday party, custom make cake, a few friends and some champagne. Keep it simple. I was going to buy a Joseph Perrier Champagne served at the wedding of Prince Albert and Queen Victoria, a very nice champagne. However the liquor store had a sale on of Moet & Chandon in the 1.5 litre category, (Magnum bottle) and this is so much more fitting for a Birthday party, I got 2 bottles.

Last night I watched snippets of President Joe Biden’s Speech on Capitol Hill, he was brilliant. The way he delivered his speech and the strong points he made to the room, showing the Republicans somewhat flustered by what he was saying but at the same time still being idiots, including the midget in the chair Mike Johnson from Louisiana. I honestly believe that the GOP would let Russia walk into Europe and shrug. When in the 1970’s communism was the menace this would never have been allowed, now it’s OK.

Biden said, to do believe that Putin will be satisfied with just Ukraine. Like Hitler in 1939, the British Government thought that he would be satisfied with the Sudetenland which is part of the Czech Republic, look what happened next. Then Poland was sacrificed, it is only when Germany turned to the West and attacked The Netherlands, Belgium and France that the world woke up. Are we waiting for the same now? Of course the big fear is that Putin would use Nuclear weapons this time. Well this is an idle threat unless Putin wishes for the end of the World, it would take only a few hours. So no it is not going to happen. But I support President Macron of France when he says we need to send troops to Ukraine, or at the very least send troops to the border and massing them along the border to make a point. Same with the Black Sea, send war ships and Turkey will help. Turkey has a 600 year history of rivalry with Russia in the Black Sea. Now is the time to step up to the plate. I cannot vote for the Democrats or Biden since I live in Canada, but I certainly support the Biden Agenda.

I think I am now fully in that category that angry Woke types love to refer to. I laugh because they too will join that Club sooner than they think.

Yesterday was my birthday celebration, it was quiet at home with Will and the old puppies Nick and Nora.

Very nice dinner of PEI Mussels and Salmon filet with grilled vegetables. Dessert was Poached Bosc Pears in Sicilian Red Wine and some hand made chocolates. The poached pears in wine we discovered in Rome, it is a favourite in Italy.

The gifts were what I wanted from Truefitt and Hill of St. James’s Street, London, purveyor of gentleman’s hairdressing products and Perfumery since 1805. Their first client was King George III and Admiral Nelson, they pride themselves on serving the aristocracy to this day. They have a Sandalwood fragrance that I love. All arrives in a beautiful box very nicely wrapped in silk paper.

Some beautiful flowers from Will and lots of good wishes. No cakes this year or so I thought, on Saturday we had a Birthday celebration for one very active member, his children had organized the party, lots of good food and a cake, some 80 guests, a great orchestra to play great music. The Birthday song was sang and then his son who had arranged for the food, most of it he cooked, says to the assembled crowd that it was also my Birthday and produces another cake and the group sang to me. Well it was very lovely and the weather and sunshine streaming into the house made it all perfect.

And now I am off to get my discount and play the victim if I do not get what I want for the camera of the 6 o’clock news.

Friday was a good news day, could not think of better news really, our life is back to normal now.

Will and I, went to the Cancer Centre for a meeting with the Chief oncologist and the surgeon, there is also a third chief of the Chemo dept with whom we will speak this week.

Basically the news is that Will’s cancer is gone, the examination with the miniature camera they inserted through his nose showed on the screen in living colour, that the tumour had completely disappeared, the CT scan also showed that all was normal and so did the blood work. The news stunned us, we were expecting some good some bad, but not all good positive news. It took us some time to understand that the menace had passed, a long 8 months of dread was finally over. Will has to go back in 3 months for a check-up but that is a routine in such cases. We are so relieved. Now Will has to continue putting on weight and so far he is doing well. Hooray for us!

In other news, the Canada Games have started and the illumination done in the park behind us and in the port area is quite magical. Organizers and athletes are wearing green and white uniforms. Concerts every night in the cruise terminal. There is even a Canada Games flame. It all looks good.

Teepee tent in the park beside our home, a bit of cheating here since a teepee is usually made of

birch bark. It is lighted up at night with multicoloured lights all around in the park, quite beautiful.

A lighthouse, there are many around the site, again a symbol of PEI given our rugged coast line.

So far our Winter has been a YoYo winter, some days hot like a Spring day around 15C and some days sort of cold at 5C or Friday at -8C, very irregular and next to no snow on the ground. So much so that I like many thought we could not hold the games with such unpredictable weather. Yes it is again one of the warmest Winter weather to date and the Winters on PEI have been getting warmer each year.

This photo on Water street shows the entrance to the Port and as you can see we have only very thin ice and it does not cover the entire surface. Don’t try to walk on that, you will sink. In fact this year we have the least sea ice on record, the water is too warm which is not good for sea life.

So to celebrate the good news, we bought some Pol Roger Champagne. Now a little funny story here, I went to the Liquor store and could not see the champagne display so I asked the clerk who informed me there was none to be had. I was very surprised to hear this and the clerk added that no there was none on the Island in any other stores. How could this be? As I said this I turn around and there just behind me is 3 brands of French Champagne, what they do not have at the moment on stock is Veuve Clicquot Ponsardin, but that is not a brand I like. So the clerk realizing what she had said then showed me in the other room what was on offer and Pol Roger is an excellent label. I know that 2022 was not a good year for the Champagne region in France, climate change again did a lot of damage.

A long weekend

This is a long weekend in PEI and in other parts of Canada, many provinces celebrate a provincial holiday, here it is Islander Day which is a fairly new holiday. Monday is also Canadian Flag National Proclamation Day, referring to the 15 February 1965 when the Maple Leaf Flag became the National Flag of Canada some 56 years ago. Prior to that date we had a Red Ensign Flag which was regarded as a colonial flag and since we were no longer a colony since 1867, we needed a distinct national flag. It took 3 years of debate in Parliament in Ottawa to get it done but it finally happened.

Today is Valentine’s Day and as Will says for a guy who was beaten to death and thrown in a ditch for being a Christian, he does not see the connection to love. I prefer the story of Psyche and Cupid much nicer and more connected to love. Their story is complicated, Cupid is the son of Venus who is jealous of the beauty of Psyche. In the end, Jupiter bestows upon Psyche immortality and she marries Cupid, now that is a nice story much better than that Valentine guy.

Will made a beautiful Orange zest and brown butter cake. I gave him a dozen pale orange roses. We are heaving roast beef for dinner with roasted vegetables and a bottle of bubbly.

Of course the little ones, Nicky and Nora will get a bit of roast beef because you know they are so mistreated, or so they say to anyone who will listen.

FOOD for the Holidays

Recently a good friend and blogger asked me about food for the Holidays, what type of food did you have as a child for Christmas etc… So I told him, he was a little taken aback, suffice to say that I and my siblings did not have your conventional upbringing especially when it comes to food and drinks. So no it was not turkey and mash potato with gravy and green peas or ham or whatever is usually served in most households. Wine was also served on a regular basis to adults until I was old enough to have a glass. Cocktails and bubbly made their appearance as a matter of fact at the table. My father always chose the wines, he liked Montrachet.

During my professional life in the many countries we lived in, the menu varied a great deal, various cultures have various fare. In many countries, lamb is a regular staple with chicken a close second, pork is not available and beef is usually served stewed not as a steak. Same with vegetables, in some places root vegetables or squash of all kinds or potatoes are abundant, rice is a side dish with all dishes. So you have to get use to different culinary traditions. Per example in Greece, they will served grilled tomatoes, rice and french fries all together with lamb or fish. In many countries butter is replaced by Ghee butter which is highly saturated in fat but gives the most wonderful taste to food. Also the concept of dieting, allergies or vegetarianism or not eating meat or certain foods is totally unknown and people will enquire about your health, because such condition is associated with the sick and the dying.

So through the years we have modified our Holiday menu to a point where the conventional is not the first thing that comes to mind. This also includes desserts and any sweet. In one country candied whole fruits was a delight to behold, in others it was honey and nut pastries in phylo dough, in others it was rich cakes and specialty chocolates of the finest ingredients made in small batches.

The country I enjoyed the most for wines was Italy, every Italian region has vineyards and all produce regional wines, the volcanic soil of Italy and Sicily produces great wines, red of course but for the last 150 years white wines. Going to the wine merchant was a delight, you could always pair wines with your meal and given the reasonable prices buying several cases for Xmas was a given. One year I found a champagne I truly loved, Jacquesson from France, an exceptional Champagne. If you come across that name, you should get a bottle.

This year will be a quiet Xmas at home, Charlottetown is very quiet and it is pleasant. Christmas Eve I think 3 people are coming over for drinks. Christmas Day we are 7 for Lunch at home. Everything for the meal has been bought including the wines so I do not have to do any more grocery shopping.

While shopping for Chestnuts, I discovered that you cannot find it here anywhere because it is simply something Islanders do not know. A strange thing, but its like veal, you cannot find it, no one carries it. Why? It does not appear that there is any reason. I finally did find chestnuts and beautiful ones at GLOBAL MARKET on St-Peter’s road at Mount Edward. It is an Asian/African grocery store and they carry the most incredible array of goods, most Islanders have never heard of most of it. I was very happy, it’s the second time Global Market has saved my bacon, Mr Will has a knack for asking for the most obscure ingredients at the last minute.
