Fix separator line pattern in add_eso_version.sh

Fixed a regular expression pattern in hack/api-docs/add_eso_version.sh that was failing to identify the markdown table separator line in docs/introduction/stability-support.md. The awk pattern was changed from | -+ (pipe followed by space and dashes) to |-+ (pipe immediately followed by dashes) to correctly match the actual separator format, allowing the script to properly update the ESO version table during releases.

This resolves the api-docs check failure that was blocking the release workflow.
