**Description**
mcpProxyBackendName is a function, producing the following output:
> Creating MCP proxy Backend {"namespace": "xxx", "nameError": "json:
unsupported type: func(*v1alpha1.MCPRoute) string"}
This small patch will make sure we log the rendered name.
