Blocked by elastic/docs#1877. DO NOT MERGE.Observability documentation now lives in the https://github.com/elastic/observability-docs repository. This PR deletes the Observability content from the
masterbranch ofstack-docsto prevent users from accidentally pushing doc changes here.Removed directories:
docs/en/ingest-mangement/*docs/en/logs/*docs/en/metrics/*docs/en/observability/*Note: History for this content will still exist in the
observability-docsrepo.elasticsearch-ci/docs failure is expected.
