fldigi + Hamlib NET rigctl TCP setup and alternative serial port option

Also retains and updates: signal path overview, channel mapping table, gain staging, common mistakes, troubleshooting order.

Test plan

  • Verify "Configuring Data Modes..." appears in the Help menu on macOS
  • Open the help dialog and verify content renders correctly
  • Verify cross-references in "Getting Started" and "AetherSDR Help" point to the new name
  • Build on Linux CI

🤖 Generated with Claude Code

Replace the conceptual "Understanding Data Modes" doc with a hands-on
"Configuring Data Modes" guide that includes:

- Step-by-step DIGI applet walkthrough (finding it, what each section does)
- CAT over TCP and TTY/PTY serial emulation explained with port tables
- DAX virtual audio devices per platform (Linux/PipeWire, macOS/CoreAudio)
- Auto-start configuration via the Settings menu
- Complete WSJT-X 3.0 walkthrough for both CAT+DAX and standalone TCI
- Winlink + VARA walkthrough with Wine notes for Linux
- fldigi + Hamlib walkthrough with TCP and serial options

Rename menu item from "Understanding Data Modes..." to "Configuring Data
Modes..." and add QAction::NoRole to prevent macOS auto-reparenting the
item out of the Help menu (same pattern as aethersdr#883).

Claude here — merged manually after resolving a conflict with PR #1036 (noise cancellation guide). Both help guides are now live. Thanks jensenpat!
