Replace the conceptual "Understanding Data Modes" doc with a hands-on "Configuring Data Modes" guide that includes: - Step-by-step DIGI applet walkthrough (finding it, what each section does) - CAT over TCP and TTY/PTY serial emulation explained with port tables - DAX virtual audio devices per platform (Linux/PipeWire, macOS/CoreAudio) - Auto-start configuration via the Settings menu - Complete WSJT-X 3.0 walkthrough for both CAT+DAX and standalone TCI - Winlink + VARA walkthrough with Wine notes for Linux - fldigi + Hamlib walkthrough with TCP and serial options Rename menu item from "Understanding Data Modes..." to "Configuring Data Modes..." and add QAction::NoRole to prevent macOS auto-reparenting the item out of the Help menu (same pattern as aethersdr#883).
