In order to maintain the quality of our products, we regularly gather store staff and conduct group education on cooking techniques to confirm cooking methods and procedures.

Pizza dough made from powder

Every store in Shakey's makes pizza dough from powder conditions. Everything is done in the store, from kneading (mixing) to fermentation and stretching to dough (rolling). This is an essential task for creating a crisp Krispy pizza dough.

Rolling work

Rolling work to determine the taste of the dough. Using a large seater, the original (dow) of the pizza dough is stretched thinly to a few millimeters thick. It is a craftsmanship that is difficult to balance the condition of the dough and the force.

In addition, we carry out preparation work at stores based on the condition of the ingredients, such as "original pizza sauce", "gouda cheese" and "Fried Potato". It takes time and effort, but it is an important process to bring out the deliciousness of the ingredients.

Fried Potato's commitment

The secret of Shakey's's original Fried Potato is to sprinkle spicy seeds on potatoes sliced to 9mm thick and fry them in a pressure fryer. It is a unique taste that cannot be imitated.

Commitment to flour (flower)

Wheat, which is a raw material for flowers, is bred in nature and carefully selected from those that feel the rich aroma of wheat. When milling, it is carefully blended to create a crisp, crisp texture.

Fermentation process of Dow

The "do", which is the source of the pizza dough, is matured over about one day after fermentation. Accurate temperature control is required for fermentation, and the temperature of the water applied using ice is adjusted to keep the temperature at the time of fabrication constant. It takes 4 hours for fermentation and 18 hours for ripening in the refrigerator.

Choosing Cheese

Gouda cheese, which determines taste and flavor, is a natural gouda cheese from the Netherlands. In order not to impair the original flavor of cheese, a block-shaped mass of about 15 kg is shredded at the store.
