There have only been 4 maestro sándwich de miga makers in the last 50 years at Recoleta's Confiteria Caren, each disciple learning the oficio from his predecessor. Hugo Lopez started working there in 1984, he was only 16 yrs old, and has devoted his life to sanguchitos ever since

Once they are ready, or he has a special order, he sends them up to the bakery in the miga elevator (migavator?)

Making sanguchitos de miga this way by hand is a dying craft. Support places like Confiteria Caren, there aren't many left.

In 1969, two brothers, Carlos and Enrique (CarEn, get it?) opened Confiteria Caren. Since then, the Vázquez family has continued the confitería tradition, making Caren one of the few longstanding classic bakeries still open in BA

End of 🧵! PS: You can read more about miga making at Confiteria Caren, and many more food stories, over on Argentina a la Mesa, a lovely project I worked on for @googlearts artsandculture.google.com/project/argent…

Explaining Argentine economics in one sentence (why travelers should bring cash and not pay with foreign credit cards) is quite the challenge
