They are two characters who have a ROMANTIC connection. That franchise doesnt focus on that does NOT mean the romance its not there, in fact, the franshise already made clear that YES sonic and Amy love each other and would NOT give up on each other
I think that "Inmaturity" plays a big part on to the Sonic and Amy dynamic
While with Rouge Sonic plays it cool and even mocks her, Amy is the only one who makes Sonic lose his cool behaviour by just being her all bubbly and sweet

In reality while Sonic acts like the funny guy deep down he is a whole other beast , literally
From what once was a cheerful, clingy and over the top amy rose who was really silly and also cartoonishly angry now you have the cold mind and chill girl whose really nice and does nothing wrong , there is no spicyness in there nor something really interesting

Something that always melts my heart when comparing the oficial media is that there's a point where Amy always chooses Sonic, chooses to believe in him with tears on her eyes, and Sonic always replies with a sincere smile
Going to be honest, the idea of Amy "moving on" from Sonic its outright stupid, and im glad Sega did not went that direction, cause Amy being a symbol of love and giving up her own feelings contradicts everything she represents.
