    I feel restaurants in Ireland are missing a trick at not being a bit more ceremonious around the new season spuds. Imagine a large bowl of steaming spuds peaking through their split skin with a shovel of butter, sprinkle of salt and fresh herbs of your choice for garnish.

    Lads, I know it's ridiculous but I'm so proud of this photo. If you saw how bad my food photography was to start with, I've worked so hard and learned so much and I feel like I've given birth to a Caravaggio. Still loads to learn like framing but indulge me for tonight please.
