- Yesterday was a huge day in my career & one I’ll never forget & never be ungrateful for. The Roux Family came to cook with me & my team. We are struggling at the moment like many in hospitality & I don’t take for granted for one second the support we are shown by the industry
- Restaurants arent expensive right now life is. Petrol is expensive, butter is expensive, wood is expensive rent & mortgages are, holidays are, milk & fucking veg oil is, everything is. Stop blaming restaurants. Restaurants are as fucked as you are. Im drunk btw & it was expensive
- End of day report from Hispi Bistro last night. We cooked for 20 people but only 17 of them paid. It’s gutting but unfortunately part of running restaurants. Anyway… MORNING
- 2 years ago in August I was told the business might go down & I should start acting accordingly. Genuinely I haven’t fucking stopped since & this week we turned a corner. We’re not out of trouble yet but are you ever ? Blood,sweat,broken bones & tears. Life of a restaurateur.
- Evening, Feel daft putting something so serious in a post… Unless people start using Burnt Truffle I will have to close it. If you’re in Heswall or Wirral in general please spread the word. I’m tired of doing videos full of doom & gloom but this is the reality. Thank you
- Young couple in Burnt truffle having lunch on Friday afternoon got up to pay & the young guy looked over at an elderly couple having their lunch & said don’t tell them while I’m still here but I’d like to get their lunch & just wish them Merry Christmas 🤷♂️
- My grandad opened a bakery about 50 years ago & my dad took it over when he got ill & opened two more. Bread has always been really important in my family so it’s only right our next venture should be a bakery in Chester. Sourdough, focaccia… & maybe a few custard tarts ?
- Hi Neil thanks for your advice. I noticed you are a keen home cook so I grabbed a couple of your recent photos to return the favour with a friendly bit of guidance… Perhaps just cook everything five or six hours less so it’s all not so dry X☺️
- Can I say something blindingly obvious ? When @RachelReevesMP announced the NIC hikes didn’t any advisors point out that if the government made PEOPLE more expensive to employ, the only logical response from a business would be to employ less people ?
- We have 100 guests booked in @TheWhiteHorsePu this evening at maximum capacity. Angela walked in this morning & said well surely we can do 50 more on the terrace if it’s warm enough. THAT… is why Angela is the fucking boss!

- Last night we got people working across @Elite_Bistros taxis home because they weren’t safe walking through the city they live in. Slow clap for the “protesters” “protesting” to make the city’s we live in safer. Well done good work.
