I’m familiar with customising the emails as explained in your first link. The hook ‘woocommerce_email_customer_details’ displays billing and shipping details. I was wondering if there is a hook I can replace this with that only displays the shipping details.

No it’s the same server / host. It’s only the domain we’ve changed.
However you’re correct that we get the same issue when WP Offload Media isn’t involved so I’ll ask the hosts about this.
