For those reading later this was resolved by adding a user with a matching email address.
Thank you Wayne I was just about to post about the same thing. However I am not sure I understand. Add a user with a matching email address. Add a user where? What do you mean by matching email address? Just kinda confused and I want to fix it.

Just a regular WordPress user under the Users left menu. The user’s email address in their profile needs to match the email address that you are sending from. E.g. my WordPress user “wayne” has the email address “wayne@postieplugin.com”
