Site Title vs. Custom Text

Using twenty 17 theme.
The plugin always uses SITE TITLE for the text shown, is there a way to have custom text there and not PULL IT from the title. Google uses the site title, and I want to have text that does not apply. i.e. I use <—MENU HOME
on the text to help OLDER phone users identify what the heck a “hamburger button” is.
