it’s a builder integrated into the theme. I don’t see it among the plugins.

Your layout builder is not made in a standard way, So the content is not automatically converted to AMP.
As an alternative solution, you should select the ‘AMP page builder’ and build the AMP page as per your requirement.

Yes, but so I have to manually reconstruct every single page of the site in AMP version, unthinkable given the hundreds of pages present.
You can ask to the theme author of your layout builder to make the layout compatible with AMP or you have to manually reconstruct every single page.
Currently, you have only these two options, I wish I could help you more but there’s not much we can do in the code which is been created by others.
