Most likely, you can use a localization file or a plugin such as “Say What?”

to modify the text being presented.
For direct changes like that, Say What is often easier than exploring code changes.
I tried to change via “Say What?” but still it is getting the “Choose a category…”

I don’t suggest changing the plugin instead as that’ll be overridden on the next update. The linked forum thread is saying to be sure to use Choose a category… as the original and not Choose a category....
