There are no files in databases. I think you are also looking in the wrong direction.
What kind of plugin have you uploaded? And what exactly caused it?
Tip: if you have a backup of the moment before this happened, you can use this to restore your website. If you don’t have one yourself, ask your hoster’s support.

That added more categories to my WP site than it was supposed to and then the upload seems to time out before getting the products into the category.
I have another website I put this plugin on and it works perfectly but the one mentioned about does not.
I have worked through support tickets with the developer and they mentioned that if we could clean up the database connected to that plugin maybe we could start over but when I look in the mySequl Database I don’t see a database for the specific plugin.
I’m not sure I want to start learning to fiddle with databases but feel like I’m running out of options.
I have back-ups of the wp website and all it’s files but the data for the plugin doesn’t seem to be populating from there.

The easiest way would be to use a backup. If you don’t have one yourself, ask your hoster’s support.
Otherwise, you should never make any manual changes to the database yourself. Use the WordPress backend interface to remove the superfluous categories. This is important as it is not about individual data records but usually about a network of several data records and internal caching.

I have actually tried removing the unneeded categories and they come right back with the next sync. That is why I felt like the instructions have to be somewhere like a database. Ok, I may look at hiring someone to help me figure this out.
Did you deactivate the plugin before you removed the categories? Maybe it creates them automatically if they don’t exist.
