Great plugin btw I prefer not the host the post content on my site, is there anyway to embed the content only?

The main feature of WPeMatico is to publish posts as a human would.
Anyway we made a plugin in the past to embed the content of RSS feeds into the content of a page.
Check out https://github.com/etruel/wperss_page You should do some testing because the plugin is a few years old.
