Email customization

Hi.

Is there a way to customize email? The code in the subject is not working:
[{site_title}] New customer booking [{booking_number}] - [{booking_date}]
It doesn’t display the date, site_title or anything.

Also, in the body I would like to add a field of which coupon code was used.

Is that possible
