Are you using any plugin/add-on that compliments Elementor? I.e. Elementor Pro?
Yes, normal pages work just fine. We are using Elementor Pro. No other plugins for Elementor though.
Unfortunately I am still unable to reproduce this issue, now with Elementor Pro. All posts created with Elementor are restricted successfully when adding Posts as an Access Condition, and likewise pages created with Elementor are restricted when adding Pages as an Access Condition.
In the screenshots you sent previously, you have added Posts + Categories as an Access Condition, I want to make sure that the content you are creating with Elementor is indeed a post, and not a page?
If that is the case, I suspect that another plugin is causing an incompatibility. The easiest way to test that is to deactivate plugins one by one until the restriction work properly.
