Hi,
You can play with the Layout options and change the number of columns. This is an option of a free plugin, just check how the block works. https://visualportfolio.co/docs/portfolio-blocks/layout/items/
The portfolio category pages are created automatically. As an example from your site → https://mediaservicesunlimited.net/portfolio-category/creative-writing/
You can also add blocks with custom queries on different pages and add as many galleries as you want.

Use the Gutenberg editor to change block sizes or insert them in columns.
