Following boorus, we could have the same color for descriptive tags (woman, long hair...), another for the series/copyright (naruto, jjk, House MD), one for characters' names (Mikasa Ackerman, Iwakura Lain) and so on

That would be too confusing. Tag colors are for purity, not category.
