Most Epic Soup Ever
“Big Batch” Chicken, Lentil, Bean & Rice Soup
Ingredients:
2 cups of cooked, skinless and boneless chicken
1 Tbsp of extra virgin olive oil
3 cloves of garlic, minced
1 cup of pink lentils, raw
1/2 cup of long grain brown rice, dry
16 cups of chicken broth
1 cup carrots, diced
1 cup celery, chopped
56 fl oz canned kidney beans, undrained
56 fl oz canned tomatoes, diced
1 tsp dried basil
1/2 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
1 cup cheddar cheese, shredded
1 cup fresh parsley, chopped
Preparation:
1. Heat oil over medium heat in large soup pot. Saute diced onion and minced garlic until soft bot not browned. Add lentils, rice and chicken broth, bring to a boil. Cover and cook over low heat for 5-8 minutes.
2. Puree half of the diced tomatoes. Add sliced carrots, celery, diced and pureed tomatoes and the beans (with liquid) to the soup. Cover and simmer about 45 minutes or until rice and lentils are cooked.
3. Stir in cooked, chopped chicken and season with basil, thyme, oregano, salt and pepper.
4. Ladle into bowls and serve with sprinkle of cheese and minced parsley on top. Is well accompanied by garlic toast.
