At Mark Spencer Hotel we are passionate about all things hospitality including our house-roasted brand, SPENCER COFFEE.
Our family CEO and Head Roaster was a finalist in the 2024 US Roasting Championship and we have won numerous awards for our coffees including GOLD for espresso for milk-based drinks at the 2025 WORLD SERIES GOLDEN BEAN COMPETITION.
The Mark Spencer Hotel has its own coffee roasting facility next to the hotel and proudly supports hosting the coffee industry with preferred rates and hosting roasting events including the 2024 US Roasting Competition West Coast Regional Competition.
We proudly serve our filter competition level coffees complimentary at our lobby café for our guests to enjoy or at our paid café service bar in espresso/milk-based form along with retail bags of roasted coffee.

There are endless ways to roast coffee beans yet the path that leads to the optimal balance for the perfect cup is elusive. At Spencer Coffee, nothing gives us more pleasure than finding the sweet spot of each coffee that your tastebuds will remember and desire. KENYA NGOMANO - Washed Process:
This is sourced from ROYAL COFEE and CROWN JEWEL green coffee from their Limited Elite lineup. It is a washed coffee from Machakos county, Kenya, produced by members of the Ngomano Farmers Cooperative Society.
The flavor profile is savory, floral, and sweet, with rose jam, caramel, chamomile, and tomato depth, balanced by Meyer lemon, kumquat, and a silky, tea-like texture.
We roasted this coffee alongside some our Colombian green coffee wholesaler partners, and they fell in love with it! Their Colombian coffee is competition grade, but all throughout their visit they couldn't stop asking for more of this Kenyan coffee!
ETHIOPIA KERAMO - Red Honey Process
This coffee is grown at an extremely high altitude ~2100 MASL by award-winning coffee grower Mate Mateyos. He won 2nd place in the 2024 Cup of Excellence for his coffee in Ethiopia - a phenomenal testament to his skill given that Ethiopia produces some of the best coffee in the world! In this process, the cherries are left with mucilage on the seed when drying which adds a depth of flavor while retaining the clean feel of a washed coffee.
The flavor notes vary between batches and brew methods but often touch on one or most of the following: hibiscus, pink peppercorn, ripe watermelon, honey and chocolate. This coffee is the last of our inventory, and we will miss it!
COLOMBIA CHIROSO - Washed Process:
This is sourced from ROYAL COFEE and CROWN JEWEL green coffee from their Limited Elite lineup. This is a low-intervention washed Chiroso cultivar coffee from Nariño, Colombia, produced by Evelio Audias Lasso Bolaños on his farm, Los Guayacanes.
The flavor profile is bright and structured with notes of blood orange, guava, sweet lemon curd, floral aromatics, and a rich finish of toasted coconut, plum, and dark chocolate.
COLOMBIA JAVA - Washed Process:
This is sourced from ROYAL COFEE and CROWN JEWEL green coffee from their Limited Elite lineup. This is a low-intervention washed Java cultivar coffee from Huila, Colombia, produced by Juliana Guevara and Wbeimar Lasso on their farm, La Terraza.
The flavor profile is intensely sweet yet nuanced, with peach candy, floral jasmine and honeysuckle, juicy fruit, and a playful boba-like texture.
