Over the past few years, we’ve developed our expertise in lacto-fermentation. Experimenting with microorganisms has not only been fascinating, but also turned out to be the missing piece of the puzzle to enrich flavors and create new combinations. It has opened up a whole new world that we can’t wait to share with you!

Founded in 2018 by Nicole Schoofs, Haricoco in Toulouse offers homemade, delicious, and sustainable meals. Inspired by a vegan cooking course in Bath, Nicole brings her passion and creativity to dishes that are both flavorful and planet-friendly, showing that conscious eating can be simple, joyful, and truly delicious.
