Sorry, i've been away for a bit. Is this still the method to use mason? (I haven't checked in on it recently). If this still works, I will merge

This should still be the method to use mason, I fixed the merge conflicts that had popped up since I created the PR so it should be ready to merge.

Just a heads up pyright and tsserver that was specified as language servers to auto-install require npm and nodejs to work, which are missing in the Dockerfile.

I also noticed some error messages from nvim-treesitter-textobjects on first startup, but that should not be related to this PR.

Cool, i'll try and take a look at the other stuff shortly. I may end up removing the dockerfile, I'm not sure it's that helpful at the moment with mason now.
