Just a small change making the GNUmakefile a bit more configurable

Motivation

make LAKE=$(elan which lake)

Isn't this what the lake command already does when you have elan installed properly? I don't think we should be encouraging this kind of thing if we can help it; calling lake should just do the right thing, and if it doesn't then we should try to set up the environment so as to make this command work.

Completely agreed with Mario. The lean command should always execute the correct version of lean for the current project. You should do this using elan (and if elan which lean works, then lean should work just as well), but you can also set PATH manually with the same effect.

As for this makefile here specifically, I want to get rid of it entirely. The only reason we still have it is because of make test, and I want to turn this into lake run test (as soon as I find time for it, but PRs also welcome).
