On HuggingFace demo, content type for processHeader is bibtex, while default should be XML #1027

On the current HF demo at https://kermitt2-grobid.hf.space (based on 0.7.3 full docker image), processHeader returns bibtex
While the normal default should be XML, below current master on local with JDK 8
