PR Description
This PR adds support for OpenTelemetry collector connectors which emit metrics from logs. This support is necessary for the count connector (https://github.com/open-telemetry/opentelemetry-collector-contrib/tree/main/connector/countconnector), for which I plan to open a PR to add it to Alloy.
Notes to the Reviewer
Should I update the changelog? It seems to me that the changelog should be updated when connectors using it will be added, instead.
