This pull request rebrands 'Dataplex' to 'Knowledge Catalog' across the documentation and configuration files, including updates to CODEOWNERS, labels, and various README files. Several issues were identified in the documentation regarding formatting and adherence to the repository style guide. Specifically, multiple instances of missing spaces before parentheses in product descriptions were found, along with a typo ('Catlog'). Additionally, the source.md file violated the required H2 heading sequence by using H2 for tool descriptions instead of H3, and several tool definitions used incorrect naming conventions (kebab-case instead of snake_case).
