Description:

Documentation for changes in: estuary/connectors#3280

Notes for reviewers:

Added openid. to conditions in iam-auth/aws.md so they match the provider/issuer earlier in the document, this prevents an error validating the trust-relationship.

I'd like to improve the table for the credentials config, any suggestions?
