Summary

The repository plugins for S3, Azure, and GCS are being moved into Elasticsearch as modules. This PR updates the Kibana links to point to the Elasticsearch guide rather than the Plugin guide.

Related to: elastic/elasticsearch#81870

This will need to be merged before the docs CI check for that PR will succeed.

@debadair I see this only being labeled as v8.0.0. You'll probably want to add v8.1.0 (and depending if you're planning to backport it to 8.0 or not, you may want to remove the v8.0.0 label)
