Update Avian to Bevy 0.18. Bump dependencies and fix errors. I also had to update CI to install some more dependencies on Linux. No user-facing breaking changes in this one! Note that we'll be using a difference release process this time, see https://joonaa.dev/blog/10/evolving-avian-development.

Objective
Update Avian to Bevy 0.18.
Solution
