feat(deploy): pass HERMES_LANGFUSE_* into the container env#8

Dedicated Hermes-only Langfuse project keys give revocation isolation from the shared LANGFUSE_* used by the eligia-core LiteLLM proxy. The fork's plugin (plugins/observability/langfuse/__init__.py) already prefers HERMES_LANGFUSE_PUBLIC_KEY over LANGFUSE_PUBLIC_KEY, so this change just plumbs the two new variables through docker-compose env interpolation. Values come from /opt/hermes/.env, populated by eligia-core/scripts/sops-to-env.sh hermes (which also gains these two keys to its KEYS_TO_SYNC list in the same release). Belt-and-suspenders: LANGFUSE_PUBLIC_KEY / LANGFUSE_SECRET_KEY stay passed too, so a partial rollout where only one var is updated still gives the plugin a valid pair to initialize with.

Matches the upstream/main HEAD merged in the previous commit. Notable delta vs the prior pin: PR NousResearch#26320 "complete observability fix" lands in plugins/observability/langfuse/__init__.py — auto-merged with our overlay's application/consumer tag patch, no conflicts. Bonus: upstream added a HERMES_LANGFUSE_PUBLIC_KEY/SECRET_KEY placeholder-prefix validator that happens to validate exactly the env vars wired in PR #8.
