Donations Form: Unable to edit defaults, currency symbol appears twice #43401

Quick summary
Donation block shows the currency symbol twice for some reason. It seems possible to edit to remove one instance, but it returns after you edit: $$
Also it is not possible to edit the default donation amounts. When first adding the block you can edit, but the changes are not reflected on the published page. When you return to re-edit the block, it's not possible to save in Gutenberg, unless some other (non-related) change is made. It's almost as if it does not see the edit as a change worth saving.
Reported in 9746718-zd-a8c and also replicated on my WordPress.com test site (simple)
Steps to reproduce
- Add Payment Form and observe duplicated currency icon
- Edit the block to try and remove the duplicated icons (they return as soon as you click out of the field)
- Edit the default values for donations (I used $25, $50, $100)
- Save changes in Gutenberg and visit published page
- Observe that the Donation form shows the default ($5, $15, $100) amounts
- Return to edit in Gutenberg, the default values are shown there again too, instead of the edited amounts
- Try to edit (again) the default values. Observe that these changes cannot be saved in Gutenberg
