just been spending time at facebook, as words happen in smaller (i.e., easier for the broken brain to handle) bits.

as i started it here, however, i thought i'd post this on lj.


tonight's candidate for 'the book,'


browned chicken in a sauce of o.j., honey, sesame oil, garlic and chives

- ~1# chicken breast chunked, patted dry and lightly floured in ~1/4 cup seasoned flour, then browned in light oil (e.g., canola, peanut, safflower) and set aside.
- deglaze pan w/ 2 cup* oj, stirring up fond(brown stuff) with whisk, mixing in ~1Tbsp honey, 1/2 T soy sauce (low-salt), 1/2 T toasted/brown sesame oil (vs. raw/light), 1tsp parsley, 1 t chives and i clove fresh garlic, minced or thin sliced.
- heat and stir, allowing oj to deglaze pan, boil off some water, dissolve honey, re-hydrate herbs, etc.
- now whisk in remaining seasoned flour to thicken, return to simmer/biol to reach full thickness.
- return chicken pieces to pan, turning to coat w/sauce,& reduce heat to 'warm'/low(est), stirring into sauce any juices from their dish. ... See more
- let sit couple mins to absorb flavors and serve with brown rice and steamed or stir-fried vegs.

* so as to have sauce for rice


cousin's boy already suggested the addition of some ginger (knew i liked him B^J ).

also decided that the experiment of adding a bit of sesame oil to the cooking brown rice to enhance he nutty flavor is a success to be repeated.

    'fond' is the brown bits _in_ the pan from cooking the chicken, caramelized meat proteins. 'fond' is what makes 'fondue', i.e., 'sauce.' B^J

    Personally...for a little kick...I would add some red pepper flakes to the deglazing...Kinda...maybe...something close to a General Tso's chicken...

    Though...adding the pepper flakes I would leave…
