The Team
Originally from North Carolina, Chelsea discovered her passion for hospitality early on and has been working in restaurants since she was old enough to join the industry. Her dedication to creating memorable guest experiences and fostering strong team culture has defined her career from the very beginning.
After moving to Colorado in 2014, Chelsea joined the Montauk Seafood Grill team, where her leadership skills and commitment to excellence quickly earned her a promotion from within. Over the past decade, she has become an integral part of the Montauk and El Segundo family, helping to shape the welcoming, high-energy atmosphere both restaurants are known for.
As General Manager at El Segundo, Chelsea brings a blend of professionalism, warmth, and a genuine love for people to every shift. Whether she’s mentoring staff, fine-tuning service standards, or ensuring each guest leaves with a smile, her focus remains on delivering exceptional hospitality.
Outside of work, Chelsea enjoys spending her time golfing, skiing, and practicing Pilates. She shares her life in the Vail Valley with her husband, Dom LoConte—who has also been part of the Montauk family for more than a decade—making the restaurant community not just her career, but her home.
Dimitri was born and raised in Atlanta and moved to farm-country upstate New York in the early 80’s. Growing up on the farm really started a lifelong love of good natural food. With two teachers as parents, Dimitri spent his summers gardening, picking fruits and vegetables and cooking, canning and preserving food to be used by the family all year.
Dimitri started his culinary career in 1990 selling grilled cheese and burritos out of a VW bus on Grateful Dead tour. He quickly realized that there may be greater opportunities out there and moved to Boulder in 1991. He started working at John’s Restaurant under chef John Bizzarro, Dimitri was deeply inspired by chef Bizzarro’s approach to fine dining and his love and respect for the history of cuisine from all over the world.
Moving to Vail in 1993 allowed Dimitri to combine a deep love of the mountain lifestyle and the chance to pursue a serious career in Vail’s fantastic culinary scene. Dimitri started at Montauk Seafood Grill in 1996 under chef Michael Glennon. He quickly rose through the ranks, becoming sous chef in 1998 and then executive chef in 2005.
Dimitri partnered up with Cameron Douglas when he bought Montauk in 2017 and continued as executive chef. Cameron and Dimitri opened el Segundo in Vail village in 2019 and he presently works as executive chef of both restaurants. Spending most of adult life within the walls of Montauk Seafood Grill has allowed Dimitri to explore a multi-cultural love of all things seafood and bring dishes of every ethnicity to the menu.
I was born in Placerville, California, near Lake Tahoe, but my love for the ocean began in North Miami Beach. My parents opened one of the first floating hamburger stands, Bikini’s Cruise Inn, where I learned the hustle of hospitality early on—running the cash register on busy weekends while spending every spare moment fishing, diving, and boating.
At 13, my family moved to New Mexico, where I discovered the mountains. I spent my teenage years snowboarding, hiking, mountain biking, and playing sports, all while working in restaurants. After studying Business Administration at Western New Mexico University, I leaned fully into the food and beverage industry, drawn to both the business challenge and the social connection it offered.
My journey took me to the Big Island of Hawaii, where I chased waves and sunshine, and later to Scottsdale, where I helped publish a biker magazine with my dad and brother. But it was Vail that truly felt like home. I moved there in 2004, and not long after, I met my wife to be, Heather, on Chair 2 at Vail.
In 2005, we learned Heather was expecting, and our first daughter was born the following year. The drive to provide for our growing family fueled my ambition, and within two years I rose from server to a General Manager at a local restaurant group. By 2010, with the arrival of our second daughter, shortIy was promoted to President of Operations, eventually overseeing 15 restaurants and more than 600 employees across Colorado.
In 2017, Heather and I bought Montauk Seafood Grill, a beloved Vail institution. Two years later, we launched El Segundo, an elevated taco and tequila bar in Vail Village, which quickly became one of the most popular dining spots in town. Through it all, our daughters have grown up in Vail’s mountains and restaurants—watching the family business evolve, and inspiring me to build a future rooted in hard work, community, and family.
From the ocean to the mountains, from running a cash register as a kid to owning two thriving restaurants, my story is about adventure, entrepreneurship, and creating a legacy for my daughters.
