land_girl posted the other week saying she couldn't have cake any more because her doctor told her to avoid wheat, eggs and dairy. It was a very sad post, and I figured that some of my vegan recipes ought to adapt to gluten-free-ism relatively well, since they already overcome the big problem of lack of eggs for binding. I'm really pleased with the eventual result!
I started tinkering with recipes and trying the results out on mostly unsuspecting labmates :-) First I used my usual double choc chip muffin recipe, but replaced the flour with gluten-free stuff and added a teaspoonful of xanthan gum. The muffins were a bit too dense and dry, but in a nice solid chocolaty way, at least. The second batch was using a tofu chocolate brownie recipe, but with soya custard rather than pureed tofu, and with the flour substitution. It came out a little too gelatinous, but really good in a chocolate steamed pudding sort of way.
The final attempt took elements from both recipes, simplified the method as much as possible, and produced results that were eaten up long before they got anywhere near labmates, but all my human guineapigs liked them, and most importantly, land_girl looked happy! I promised I'd post the recipes, and I'm making this world-readable because bopeepsheep wanted to point someone in this direction, but please leave me to pass this around/post to vegancooking when I've perfected it properly!
