Garlic-Roasted Tomatoes

4 Large Beefsteak tomatoes (about 3 pounds), cored and halfed crosswise
2 tablespoons of butter cut into 8 thin slices (I think a drizzle of olive oil would work just as well!)
4 garlic cloves, thinly sliced
course salt and pepper

Preheat oven to 400 degrees F. Place tomato halves, cut side up, on a large, rimmed baking sheet (I covered the bottom with parchment paper for easier clean up). Dividing evenly, top with garlic, butter, salt, and pepper. Cook 40-45 minutes, or until tender.

Week 1, Day 2, 30 minute walk:

We walked the same route as we did on Day 1 of our training. It was tougher for me on this go round for some odd reason--probably due to the fact that I didn't stretch the calves out as much! I do have a new pair of Nikes and socks...which are lovely.

Week 1, Day 3, Biggest Loser Weight-Loss Yoga with Bob:

We opted out of doing the 3.0 mile walk for this day. We wanted to work on more than just walking, so, we did the level 1 (10/20/10 warm-up, work-out, cool down) yoga with Bob. This DVD kicks our ass. It's hard, it's painful, and it makes you hurt!

Week 2, Day 1 (Sunday):

We managed to walk 2.7 miles in about an hour. This is a HUGE accomplishment for us! For me, especially, since our neighborhood is chock-full of nasty ass hills! I figured out where the blisters are going to be and am planning on buying something to help with that.

**Just a note--the damned yoga DVD did me in, but the almost 3 mile walk didn't? WTF?

So, we begin our first day of "self created" training for the 2009 Cooper River Bridge Run!

We are following (loosely, as we may not have the actual time to do this exactly and one of us works weekends!) This Program that I found online.

Week 1, Day 1, 30 minute walk:

We chose to walk in the neighborhood today. It's lovely out (warm, breezy weather) and I am home early enough to walk and then fix dinner. Some days we will utilize the treadmill. Our neighborhood has some nice hills in it and flat terrain. My theory is that if I am training to walk over a Large Bridge and through downtown streets (6ish miles) that I need to accustom myself to walking outdoors!

We walked the 3 mile Breast Cancer walk back in October with no issues. *nods*

Feet a bit sore...legs a bit tired...but, very happy we started our plan today!
