Sponge cake:
- 900 grams of flour
- 1/2 of a teaspoon of salt
- 30 grams of yeast
- 100 grams of sugar
- 140 grams of butter
- 4 egg yolks
- 1 vanilla sugar
- lemon peel
- approximately 3 dl of milk
- 4 tablespoons of rum
Filling
For Nut Roll
- 400 grams of ground walnuts
- 150 grams of sugar
- 2 dl of milk
For Poppy Seed Roll
- 400 grams of ground poppy seeds
- 150 grams fo sugar
- 2 dl of milk
- 4 egg whites

First we take a large mixing bowl and put 800 grams of flour into it.

After that we make a little hole in the middle where we will put the rest of our ingerdients. First come 4 egg yolks.

Next come the 4 tablespoons of rum.

After that we put in 100 gams of sugar.

Do not mix it quite yet!
Let it sit for a little while and in the meantime we can prepare our yeast.
We crumble the 30 grams of yeast into a large cup.

Next we add in some sugar.

Finally place in 0.3 dl of milk and set it by a fireplace or any place that is warmer than room temperature.

Now let’s get back to the mixing bowl.
Put in 140 grams of butter and after that’s all done we can start mixing it.


Mix it by making small circles and only picking up small amounts of flour at the time.
After a couple of minutes of mixing put in 3 dl of milk and mix the same way we did before.

After yeast has risen to the very top of the large cup it’s ready to be added to our mixing bowl.


Next we mix in the yeast and at the end it should look like this.

Now we can move on over to the second step which is to knead the dough.
First we must get our work area ready by simply putting some flour on to it.

After the dough has been kneaded well it should look a little something like this.

Now we can start making our filling.
For Nut Roll:
We put 400 grams of ground walnuts in a bowl and add 150 grams of sugar to it.

Next we put in 2 dl of milk and mix that well.


That’s all there is to the walnut filling.
For Poppy Seed Roll:
We put 400 grams of ground poppy seeds in a bowl and add 150 grams of sugar to it.


Next we put 2 dl of milk to the bowl nd mix that well.

Last but not least we put in 4 beaten up egg whites.

Next we need to roll out our dough so that we can put in the filling.



Next we put on top of filling of choice and spread it arond the rolled out dough.


I have also decided to put some raisins into my potica but this is just personal preference.


After raisins are spread throughout the whole dough we can roll our potica.
First we need to roll it a little bit by force by simply rolling the dough with our hands. However then we continue by grabbing the cloth and putting enough force into it so that the potica rolls by itself.










Finally we just need to prepare our mold which is covered by parchment paper and put our potica in it.


Next we let it rest for the whole night.
And the next morning we put it in the oven at 190°C ( 374 Fahrenheit) for 1 hour.


Now all there is left to do is to cut it into squares.
