Crack Cookies

List of ingredients:

  • 250 grams of coconut flour
  • 120 grams of cocoa ( I used 2 different types of cocoa but that is just personal preference)
  • 100 grams of crushed nuts
  • 250 grams of powdered sugar
  • 3 egg whites
  • 3 egg yolks
  • extra powdered sugar (cca. 100 grams)

First we mix all 3 egg yolks.

After this is mixed we start adding 250 grams of powdered sugar.

Next we start putting in the cocoa powder.

We then follow up with 250 grams of crushed nuts.

And that leaves us with only the coconut flour and egg whites. First we are going to put in all 250 grams of cocnut flour. While that is mixing well we can take that time to beat up the egg whites.

Last but certainly not least we mix in the beaten up egg whites ino our mixture. I’d recommend using a whisk for this so we do not ruin the properties of beaten up egg whites.

Bonus tip: Mix in the beaten up egg whites by only lifting up the mixture and putting it on top of the beaten up egg whites and not actually whisking it because then we would be doing the same thing a mixer is doing it.

Now we can prepare to get our hands “dirty”. We must prepare a baking tray which is covered with a layer of parchment paper so that our cookies won’t stick to it. We need to also get ourselves a plate in which we have 100 or so grams of powdered sugar so we can roll our crack cookies into it.

Now we finally start making little ball shapped cookies and rolling them over some powdered sugar.

After some time and effort our baking tray should be looking a little something like this.

You should also make sure that you do not put them too close to one another since they rise in the oven.

They make at around 180 °C ( 356 Fahrenheit) for 5-7 minutes. I wouldn’t recommend any more than that since they easily burn.

I decided so serve them up with a cup of tea since that combination is to die for.

Marble Cake

List of ingredients:

  • 250g of butter
  • 500g of sugar
  • 4 egg yolks
  • 4 egg whites
  • 1 sugar with vanilla exract
  • 1 baking powder
  • 500g of flour
  • 1,5dl of milk
  • 2 tablespoons of rum
  • 3 tablespoons of cocoa powder

We start off by putting 250 grams of butter into a mixing bowl and mix it well.

After we get a nice consistency we start adding all of the sugar. However we must be carefull not to put all of it in at once because that way the texture will get ruined since the mixer won’t be able to mix it very well.

Next we add in 4 egg yolks and start mixing it.

Next we put in 3 tablespoons of rum.

After there is no more liquid left from rum we can put in 1,5dl of milk.

Now that the milk is fully mixed it we can go onto the next step. And that is to put in 500 grams of flour. And  once again we must do the same exact thing we did with the sugar for obvious reasons.

And while the flour is mixing we can beat up 4 egg whites and add them to our mixture so it gets softer. But now we can no longer continue with a mixer since that would ruin the beaten egg whites and have to use a whisk and do it the “old fashioned” way.

Next we choose our baking mold andput in some parchment paper so that the Marble Cake doesn’t stick to it. But do not put in all of the mixture, put in only half or so depending on how much chocolate you want in your dessert.

And we put in 3 tablespoons of cocoa powder in the rest of the mixure and mix it until the cocoa powdfer is fully mixed into the batter.

Now we only need to put the brown batter on top of the yellow one.

Now we just need to put it in the oven at 180°C ( 356 Fahrenheit) for 75-90 minutes.

Bonus tip:

To make it even prettier and yummier you can put some powdered sugar on top.

All there is left to do is to cut it into squares and serve them on a plate.
