ingredients for 3-4 servings
1 carrot, grated (thickly, if possible)
2 spring onions, finely chopped
2-3 leaves mini white cabbage, shredded
2 tablespoons Greek yogurt (I use Fage 0%)
1 tablespoon mayonnaise
splash of cider vinegar
- Combine the yogurt, mayonnaise, and cider vinegar; mix well.
- Add the sliced vegetables, and stir to coat well.
- Chill until ready to serve.
Top tips:
- keeps in the fridge for 2-3 days.
