I still use some of her old tins and pots. It feels like it\u2019s in the blood somewhere.\u201d<\/p>\n<p>Dez\u2019s journey began at 14, working in the fast-paced local chippy Captain Cook\u2019s, where he says he learned \u201ceverything I know really.\u201d<\/p>\n<p>But while those early jobs gave him practical skills, he soon realised that running his own caf\u00e9 would require more than experience behind the counter and that he needed the right training.<\/p>\n<p>After researching bakery and catering courses, Reaseheath stood out. \u201cWhen I came here and saw the level of expertise in the staff and the equipment, it was a no-brainer. It takes me about an hour each way to travel but it\u2019s worth it.\u201d<\/p>\n<p>Beyond cooking, the college helped shape his approach to business. \u201cI\u2019ve learned professionalism, standards, health and safety, labelling. It\u2019s more than just the qualifications \u2013 it\u2019s the mindset,\u201d he explains.<\/p>\n<p>The chance to take over a vacant community centre kitchen came at 17. \u201cMy mum had to co-sign the contract because I wasn\u2019t old enough. My dad\u2019s self-employed, so he\u2019s always backed me doing something for myself.\u201d<\/p>\n<p>Operating from a community centre keeps costs low, allowing him to keep prices accessible. \u201cEverything\u2019s homemade and affordable. Because I\u2019m based in a community centre, my overheads are lower. That means I can charge less and still make it work,\u201d he says.<\/p>\n<p>Dez\u2019s day is long but rewarding: prep before 7am, cooking breakfast, setting up the counter, checking stock, opening at 9am, and closing at 5pm \u2013 all balanced with college work.<\/p>\n<p>\u201cThe best part is the people,\u201d he says. \u201cThe whole point of the caf\u00e9 was to bring people together. I\u2019ve seen people who don\u2019t even like each other put their differences aside to come in and eat. That\u2019s what I wanted.\u201d<\/p>\n<p>Looking ahead, his focus is on sustainable growth. \u201cIn five or ten years, I\u2019d love to expand. Not necessarily a big franchise, I\u2019d rather build a strong team and create something sustainable. If I can step back a bit one day and know it runs well without me, that\u2019s the goal.\u201d<\/p>\n<p>For other young entrepreneurs, his advice is simple: \u201cGo for it but think about every aspect. Hidden costs catch people out. You\u2019ve got to think about every possibility.\u201d<\/p>\n<p>Blending family tradition, Reaseheath skills, and his own drive, Dez is already turning ambition into action, building a caf\u00e9
